Our search for the “perfect pancake” took us north – a spectacular ride through central New Hampshire on I-93 North, past Franconia Notch and beyond the place where New Hampshire’s Old Man of the Mountain once stood. To the sweet-sounding and appropriately named White Mountain town called Sugar Hill.

The towns is one of the highest in elevation in the entire state of NH and the restaurant known as Polly’s Pancake Parlor is on the right side of the road near the top of the hill. Once parked take a moment to appreciate the scene of Cannon Mountain to the south and Mount Lafayette to the southwest. The view from this location has not changed much since the days Bette Davis  visited Butternut cottage. Bette eventually married “Farny” – a local resident and spent many hours in this part of the NH White Mountains. The story of Polly’s Pancake Parlor goes back well before her visit here.

History of Polly’s Pancake Parlor, Sugar Hill, NH

The original Polly’s Pancake Parlor building was constructed in 1830. Polly, Will and family began serving the public in 1938. They offered pancakes, waffles and French toast – “All you can eat for 50¢.” The idea was to stimulate sales of their maple products. The maple farm, known as Hildex was the primary source of income.

Polly and Will’s daughter married Roger Aldrich in 1949 and in that year took over the management of “Polly’s Pancake Parlor.” This home and farm has been continuously occupied by the same family (through marriage) since it was originally settled in 1819. Some of the ancestors portraits are hanging on the walls in the pancake parlor. You’ll also find Civil War relics along with the old tools, advertising posters and sheet music covers. Sorry, none of the antique articles displayed are for sale but, you can shop for NH Souvenirs and buy some NH Maple Syrup and Polly’s Pancake products to take home.

The menu at Polly’s featured breakfast and brunch items. Enjoy a stack of Oatmeal Buttermilk, Buckwheat or Whole Wheat pancakes. Savor a waffle of your choice smothered in real New Hampshire maple syrup or have a slice of quiche made with local Harman’s cheese. The atmosphere is family-friendly, relaxed and come-as-you-are. The service is friendly and attentive, but all the food is cooked to order and well worth the wait.
